Region : Italy > Lombardy > Brescia > Cazzago San Martino
Tasting Note : Greenish yellow with natural residues. Fresh and floral with pineapple notes accompanied by light citrus hues and white pepper, thyme and rosemary.
Blend : 100% Chardonnay.
Wine Making : Traditional method. Vines are grown biodynamically, first Franciacorta of this kind. First fermentation with indigenous yeasts in terracotta jars and steel tanks for 9 months followed by a second fermentation in bottle. Without filtration and without disgorging.
Ageing : At least 12 months in bottle.
ABV : 11%
Drink With : Italian pasta salad, mature or oaked cheddar, great as aperitif.
