Tasting Note : Characteristic apple flavour along with white flowers and roasted nuts. Highly acidic and dry, essential for its kind.
Blend : 90% Mauzac Blanc and 10% Chardonnay.
Wine Making : Traditional method. Under AOC Limoux regulations vines are hand harvested. An initial fermentation in stainless steel vats to control the temperature with a second fermentation in bottle.
Ageing : At least 9 months on lees.
ABV : 12%
Drink With : Herb spiced pork dishes, oily fish, Brie or Camembert, stuffed mushrooms.
