    Tasting Note : Aromatic with fragrant apples and ripe pear leading to a full flavoured palate with fine, constant bubbles.

     

    Blend : Chardonnay 60% and Pinot Grigio 40%

     

    Wine Making : Traditional method. Fermentation takes place off the skins followed by gentle crushing. Fermentation takes place at 14°C in stainless steel tanks the following spring. Lees contact for 5-6 months results in richness and extra texture.

     

    Ageing : 6 months fining on less and an additional at least three months in bottle.

     

    ABV : 11.5%

     

    Drink With : Vegetable soups, crisp salads, oven baked fish.
