The first Brut Nature ever produced, from the first winery to use the term cava. The first bottle was produced in 1945 with no added sugar.

    Tasting Note : Pale golden yellow with green highlights. The palate is structured and long. notes of brioche, toasty notes and balsamic glaze.

     

    Blend : 45% Xarel-lo, 35% Macabeo and 20% Parellada.

     

    Wine Making : Traditional method. Half of the grapes come from over 50 year old vineyards, and 30% of them are over 25 years of age. A manual harvest is followed by fermentation in oak barrels and then fermentation in bottle in rima resting position to favor the yeast autolysis process greatly improving structure, and complexity. after manual disgorging, the wine is re-corked. There is no added sugar.

     

    Ageing : 6 months on lees in chestnut barrels and a second fermentation in bottle for over 50 months.

     

    ABV : 12%

     

    Drink With : Cured meat, shellfish paella, gordal olives with almonds.
