Tasting note : A soft subtle pink with clean and pure aromas of citrus, white fruit and cassis, layered on top of a delicate creaminess. Compared to the subtle nose there is a suprising volume of deep fresh fruit, from red cherries and rasberries to forest fruits breaking through soft spice. A long and sensual wine.
Blend : 55% Macabeo, 20% Xarel-lo, 20% Parellada, 5% Monastrell
Ageing : picked quickly, the grapes are kept cool with dry ice to keep their fruity freshness before blending and ageing in bottle for a minimum of 15 months.
ABV : 12 %
Drink me with : Appetizers, guinea fowl, seafood, soft cheese, white fish and summer fruit desserts.
About the Producer : The farm at Raventos i Blanc has been in the family since 1497. Planted as vineyards in 1872 by Josep Raventos Cava Fatjó to create quality sparkling wine, the vineyards and winery have passed down from generation to generation to the present day. The family has a commitment to the soil and consider it a daily passion to nurture the land and create quality wines on their unique limestone soil, a remnant of the miocene era leaving deep soils left from the movement of techtonic movements. The top soils of gravel and clay are perfect for the three classic grape varieties of Cava, giving a balanced acidity and floral earthiness to the wines that is hard to find elsewhere.
