Tasting Note : Fine persistent bubbles. Amber colour with fresh aromas of apples, raspberries and sourdough with a full palate and a lemon twist at the end. Fermentation in bottle adds a biscuity aroma.
Blend : 45% Pinot Noir, 45% Pinot Meunier and 10% Chardonnay.
Wine Making : Traditional method. Bottle fermented with reserve wines from previous vintages to give further complexity and a consistent extra dry non-vintage style.
Ageing : Aged in lees for 18-24 months.
ABV : 11%
Drink With : Buttered lobster, appetizers, on its own.
